How the ServSafe Manager Exam Works
Everything you need to know about the format, content, and passing score of the ServSafe Food Protection Manager Certification Examination — plus how to study for it efficiently.

The 10 unscored "pilot" questions are mixed in with the 80 scored questions and are not identified to the test-taker, so it's worth treating every question on the real exam as if it counts.
The 10 content areas
The ServSafe Manager Book organizes food safety into 10 chapters, and exam questions are drawn from across all of them:
- Providing Safe Food — why food safety matters, and who is most at risk from foodborne illness.
- Forms of Contamination — biological, chemical, and physical hazards, allergens, and food defense.
- The Safe Food Handler — personal hygiene, handwashing, glove use, and illness reporting.
- The Flow of Food: An Introduction — the temperature danger zone, cross-contamination, and thermometers.
- Purchasing, Receiving, and Storage — approved suppliers, receiving checks, FIFO, and date marking.
- The Flow of Food: Preparation — thawing, cooking temperatures, cooling, and reheating.
- The Flow of Food: Service — holding temperatures, serving safely, and allergen-safe service.
- Food Safety Management Systems — active managerial control and the seven HACCP principles.
- Safe Facilities, Equipment, and Pest Management — facility design and integrated pest management.
- Cleaning and Sanitizing — the difference between cleaning and sanitizing, and master cleaning schedules.
In practice, the largest share of real-world exam questions tends to focus on the "Flow of Food" chapters (4 through 7) — time-temperature control, cross-contamination, and cooking/cooling/reheating — since these cover the operational core of preventing foodborne illness.
How to study effectively
- Practice under real conditions. Take a full-length, 80-question practice session in one sitting to build stamina for the real 2-hour exam.
- Read every explanation, right or wrong. Understanding why an answer is correct helps with the many scenario-style questions on the real exam, not just recall-based ones.
- Use your score breakdown. Focus your remaining study time on whichever content areas score below 75% first.
- Know your numbers. Cooking temperatures (165°F / 155°F / 145°F), the danger zone (41°F–135°F), and cooling times (2 hours / 6 hours total) are tested repeatedly in different scenarios.
